The fifth and most elusive taste, umami is often described as a “savory” flavor. It is found in foods that are rich in protein, such as meats, cheeses, and soy products. Umami can also be found in certain vegetables, such as tomatoes, mushrooms, and peas. Umami pairs well with other savory flavors, such as salt, herbs, and spices. It can also be paired with sweet or sour flavors to create a more complex taste.
